Ginger Broth with Vegetables

Ginger Broth with Vegetables

Makes 1 serving

Ingredients

  • 1 package unflavored Juven®
  • ¾ cup low sodium chicken broth
  • 1-inch piece fresh ginger root, peeled and chopped finely
  • 1 tablespoon fresh lime juice
  • Pinch salt
  • ¼ cup cooked white or brown rice
  • ¼ cup chopped cooked white chicken meat
  • 2 tablespoons shredded carrots
  • 2 tablespoons chopped sugar snap or snow peas
  • 2 mushrooms, sliced
  • Chopped cilantro

Directions

Pour the broth into a microwave safe container; add ginger and microwave for 1 to 2 minutes, until it is very hot. Remove from the microwave, cover and steep for 10 minutes. Strain broth and return it to the microwave safe container.
Add lime juice, salt, rice, chicken, carrots, peas and mushrooms and return to microwave for 1 to 2 minutes or until hot and the carrots are tender. Remove from microwave: stir in the Juven and add cilantro. Serve.
